Dad's Day Barbecue

It's Fathers Day -- and what better way to thank Dad for all the special things he does, than to let him relax while you prepare a barbecue in his honor?

Warm Smashed Potato Salad with Blue Cheese
A delicious potato side dish that Dad is sure to enjoy!
Serves 4

  • 4 cups quartered cooked red potatoes (10-12 medium red potatoes)
  • 1 cup diced red pepper (1 medium pepper)
  • 1 cup diced green pepper (1 medium pepper)
  • 1/2 cup diced celery (2 stalks)
  • 2/3 cup crumbled blue cheese
  • 1/3 cup olive oil

In a large bowl, combine ingredients and toss with a fork, while pressing down on the potatoes so that they are slightly smashed. Serve warm.

 

Blackened Rib-eye Steaks on the Grill
Serves 4

  • 4 rib-eye steaks, 1 1/2 inches thick (approximately 1 pound each)
  • 4 tablespoons butter
  • 4 teaspoons blackened steak seasoning

Rub steaks with butter and seasoning. Grill on a rack 4-5 inches from medium heat for approximately 12-14 minutes (medium), or longer for well done.

 

Grilled Vidalia Onions
Serves 4

  • 2 large Vidalia onions (3/4 pound each), sliced
  • 2 tablespoons olive oil

Toss onions with olive oil until well coated. Place on the grill and cook for approximately 5-7 minutes over medium heat, or until onions turn golden brown.

 

Tomato Salad

  • 2 1/4 pounds ripe tomatoes, sliced
  • 2 cups basil leaves, finely chopped
  • 4 tablespoons sliced olives, finely chopped
  • 6 tablespoons olive oil
  • 3 tablespoons balsamic vinegar

In a food processor or by hand, finely chop fresh basil and olives and toss with sliced tomatoes. Season with olive oil and vinegar. Keep chilled until ready to eat.

 

Vanilla Fudge Ice Cream with Dried Strawberries

  • vanilla fudge ice cream
  • 4 ounces dried strawberries
  • (You can find these at gourmet stores or online at www.friedas.com. They are a delicious addition to this refreshing dessert.)

Top scoops of ice cream with dried strawberry pieces.
