Incredibly, Kellogg's Pop Tarts are celebrating their 50th anniversary this year. We have no doubt that you, like us, have popped a pack into your toaster at some point over the years—whether it was an over-the-top flavor like Hot Fudge Sundae or a classic like Strawberry. Maybe you've even tried your own homemade version, because when a product spends 50 years on the grocery shelves, it's bound to inspire all kinds of DIY spins.
To pay our respects to the snack that's saved so many of our school lunches and post-midnight binges, we've found a nice little batch of homemade Pop Tart recipes. Some are in flavors Kellogg's doesn't offer (yet), while others are attempts to come up with a healthier version of the old classic.

Filled with whatever fruit paste your heart desires, these customizable healthy Pop Tarts sound (and look) scrumptious. The recipe from Desserts with Benefits yields 5-8 tarts, which is perfect because that's about how many we think we could put away in one sitting.
Vegan Berry Pop Tarts
These Vegan Pop Tarts by Minimalist Baker sound so good— not to mention virtuous—we recommend trying them out with breakfast, lunch, dinner, snack, second dinner, or a late-night snack.
