Yankees shortstop Derek Jeter tries to incorporate well-balanced meals into his daily routine. For breakfast, he eats an egg-white (rather than whole egg) omelet. He has long enjoyed an omelet with a bit of ham and just a hint of cheese, but lately he has been changing it up with an all-vegetable version that includes broccoli or red and green peppers. Omelets are a great way to start your day and are super-simple to make, whatever ingredients you choose.

| 1 teaspoon olive oil | A few grinds of black pepper | |
| 4 large egg whites | 1/4 cup chopped lean ham | |
| Pinch of salt | 1/4 cup (1 ounce) shredded cheddar |
Heat the oil in a nonstick medium skillet over medium-high heat until the skillet is hot. Whisk the egg whites, salt, and pepper together in a bowl until foamy. Pour into the skillet and cook until the mixture has barely begun to set around the edges, about 30 seconds. Using a heatproof spatula, lift the cooked edges and gently push them towards the center, tilting the skillet slightly to allow the liquid egg whites on top to flow underneath, then cook for 30 seconds. Repeat and cook until the eggs are almost completely set but still slightly moist.
Sprinkle the ham and cheese over the top of the omelet. Reduce the heat to low and cover. Cook until the cheese is melted and the top of the omelet is set, about 30 seconds.
Uncover the skillet. Slide the omelet out of the pan, using the spatula to fold it in half. Serve hot.
