    3 3/4 cups water 1/4 cup olive oil
    1 1/2 cups long-grain rice 1/2 to 1 cup diced green or red pepper
    1/2 teaspoon salt 1/4 cup pitted black (or green) olives
    2 tablespoons Dijon mustard 1/4 cup sliced green onion
    2 tablespoons white vinegar 2 cooked chicken breast halves, diced
