Disco Fries

There are many compelling reasons for New Jersey diners to be open 24 hours, but disco fries -- French fries topped with brown gravy and mozzarella or American cheese -- definitely make the top of the list. As an American adaptation of French-Canadian poutine, disco fries are the perfect vehicle for soaking up the excesses of a late night in the bars and clubs (or maybe the discos of an earlier era?), and any greasy spoon worth its salt has them on its menu -- or has a cook in the back who knows how to make them.
