This month in Every Day with Rachael Ray magazine there is an article featuring my tips and recipes for a “Girls Night In” that won’t totally blow your waistline. (Although it sure seems like my lot in life is to be surrounded by friends who simply can’t put on weight!) My mission for the article was to gather my closest girlfriends together for a party. This was no easy task—some are busy moms, one is a high-powered attorney, etc.—but they all rearranged their schedule and said yes. I was thrilled to have them all in one room. It really was a true girls night in.
They loved all the food I created (like watermelon cups with feta and mint and spaghetti with pancetta and roasted tomatoes) and we all ate and drank to our hearts content. The photographer and the whole crew from Every Day with Rachael Ray were amazing, but they didn’t need to direct us at all—we were all having such a good time we forgot the camera was even rolling. We had so much fun trying on all the clothes too. The older I get, the more I appreciate and cherish my friendships!
Now that the April issue is out I promised them a dinner to celebrate the spread. I wonder where I’m going to take them? It’s times like this that it’s a good thing to own a bunch of restaurants!
