“To gather dough as I work, I use a classic plastic bench scraper, which you can get inexpensively at hardware, restaurant-supply and specialty cookware shops,” says Symon. “The plastic ones are better than the rigid metal ones because you can manipulate them more easily. I always have one in the kitchen. It’s an invaluable tool and should be part of every cook’s arsenal”—whether you’re gathering pasta dough, masses of chopped vegetables or a heap of finely minced herbs.
