Easy and Delicious Pasta Dishes

Sunflower Pesto Pasta
Serves 3

  • 1 pound pasta of your choice (curly ones that catch the sauce work especially well)
  • 1/2 cup shelled sunflower seeds (3.75 ounces)
  • 4 cups basil leaves
  • 1 cup grated Parmesan cheese
  • 1/2 cup olive oil

Chop basil leaves in a food processor or blender. Once finely chopped, add sunflower seeds and process until mixture resembles course meal. Add Parmesan and olive oil and process until mixture is smooth. Toss with cooked pasta that has been thoroughly drained.

Tortellini Trecolori Salad
Serves 2-3 for a main course
A good-for-you, warm pasta dish that is easy and delicious.

  • 1 pound cooked cheese tortellini (or mini cheese raviolis if you prefer)
  • 2 cups chopped radicchio
  • 1 cup chopped arugula
  • 2 cups basil leaves, chopped
  • 1/3 cup olive oil
  • 2 garlic cloves, sliced

Cook pasta according to package directions and drain thoroughly. Add olive oil to the pot where the pasta was cooked. Once the oil is hot, add radicchio, arugula, basil and garlic and stir until vegetables begin to wilt. Add pasta and continue to stir until vegetables are cooked through and the pasta is hot. Serve with cracked black pepper.

Cold Tortellini Salad with Dill, Tomatoes and Smoked Provolone Cheese
Serves 2-3 for a main course
A wonderful light summer meal that would be suitable for lunch or dinner.

  • 1 pound cooked cheese tortellini
  • 2 cups chopped tomatoes
  • 2 tablespoons capers
  • 2 tablespoons chopped dill
  • 1 tablespoon chopped scallions
  • 1/3 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 cup grated smoked provolone cheese

Cook tortellini according to package directions and drain thoroughly. In a bowl, mix tortellini with the tomatoes, capers, scallions and dill and toss with the vinaigrette dressing -- which is made by blending the olive oil, vinegar and mustard together in a separate bowl. Add provolone and mix thoroughly.
