Because pumpkin is a low-acid fruit, it can’t be safely canned using home preserving methods, either with a water bath or pressure canner. Scoop the finished pumpkin butter into jars and refrigerate for up to 1 month or freeze (making sure to leave 1 inch of headspace in the jars for the butter to expand) for up to 1 year.
