Is it us, or does it seem like everyone else is on vacation right now? Since a Caribbean trip may not be in the cards this February, we thought we'd bring a little bit of summer into our wintry existences with an indoor picnic. Tell your kids it's summer all of a sudden and break out the shorts and bathing suits. Lay a blanket down on the kitchen floor and bring out the family picnic basket or cooler, packed with favorites. We love cream cheese and jelly sandwiches cut into little squares, baby carrots, potato salad and, of course, lemonade to drink. (Fried chicken, made by someone else, would also be a decadent way to go.) For dessert? S'mores, of course! Our microwave recipe is easy, and there are no messy campfires to build.
What you'll need:
1 bag large marshmallows
What you'll do:
(We recommend you make these one at a time.)
Place half a graham cracker on a microwave-safe plate. On top of the cracker, place half a chocolate bar -- or enough to cover almost the entire cracker. Place a marshmallow on top, then cover with the other half of the graham cracker. This may be a little wobbly; just give it a gentle smush.
Put the plate in the microwave and cook for 30 seconds, or until the marshmallow has expanded and gotten all melty inside.
Remove from the microwave and let cool before eating. The s'more will be very hot. But it will definitely be worth the wait.
