Take gooey cheese, toasted bread and combine them in a fun finger food format, and you've got the ultimate lunch/snack/dinner for hungry young tummies -- the quesadilla! This menu staple is easy for kids to pitch in with, so cook some up tonight!
What you'll need
3 six-inch (150mm) flour tortillas
1 cup shredded yellow cheese
Vegetable cooking oil
1/2 cup finely chopped tomato
1 cup shredded white cheese Parsley or cilantro leaves
What you'll do
Lightly fry each tortilla in 1 tablespoon vegetable oil until crisp and golden, turning once. Sprinkle with combined cheeses and top with tomato. Put lid on pan and turn heat to low. When cheese is melted, fold tortilla in half. Cut each tortilla into quarters. Garnish with parsley or cilantro leaves. Serve warm. Yield: 3 servings. If using a conventional oven, place tortillas on a cookie sheet and bake at 350°F (180°C) for 10 minutes or until cheese is melted.
