
It's a fiesta in a bowl! If you like a little spicy heat, add a seeded, chopped jalapeno along with the beef or a pinch of chili powder along with the taco seasoning.

Ingredients:
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 can corn, drained
- 1 (15-ounce) can dark red kidney beans (do not drain)
- 4 cups low-sodium tomato juice
- 1 package taco seasoning
- Tortilla chips, for garnish
- Shredded cheese, for garnish
Directions:
Heat the oil in a medium skillet over medium-high heat. Add the beef and cook until no longer pink and starting to brown. Drain well and set aside.
Meanwhile, combine the remaining ingredients except the garnishes in a large pot and bring to a boil.
Add the hamburger to the pot and simmer for about 10 minutes. Serve with crushed tortilla chips and shredded cheese.
