"Ground turkey is lean and dries out fast, so I add a tablespoon of olive oil to the mix. I beat an egg and add half [an egg] per pound of meat to bind. Then, add lots of whatever you like. I use finely chopped onion, sometimes garlic or peppers, salt and pepper, and lots of chopped fresh herbs. Sage is a must. If it’s messy, I'll add a bit of stale bread bits.
