I pick one of these up every few months when I'm feeling uninspired or need a quick meal. I never do anything but chop it up and serve it though. Now I'm a little ashamed of myself! :smileyvery-happy:

I don't live close enough to a big grocery store to just pick up a chicken. BUT, I always have leftover chicken that I've cooked. These are great ideas!!

I have a whole chicken in my freezer right now so I was trying to calculate how many of those meals I could make with it if I just roasted it myself and cut it up.

The chicken I used for my lettuce wraps I made yesterday, and am eating away at again today, was from left over thicken thighs. They are so affordable, and I got B1G1 free last time I shopped. Love that! I make chicken pasta salad from left over also. And my DD7 will eat just cubed, cooked chicken for a snack like popcorn.

Im afraid of drying out the bird. I have bought some pretty bad rotisserie chickens too, lol. They just seem to easy to dry out.

Absolutely!!! I'm going to try some teriyaki chicken after I go grocery shopping next week. Then ham and cheese, and BLT....it's endless!!

I have always been afraid of roasting chicken in the oven too, I have dried out a few. I don't think my mom ever cooked chicken that way either. DH loves chicken cooked in a slow cooker in water and LOTS of seasonings. I think the part he loves best if smelling it when he comes home...lol. And then I can use the left ove chicken for a lot of differnt things. I'm going to try pot pie soon!
