I'm pretty sure someone here told me it would be okay. I have a few recipes that call for fresh ginger, but I never have it when I need it. Can I freeze it in small chunks and just pull it out and grate it as needed?

IVe never done it, but I've read many times that you can.

I'm pretty sure I saw on Rachael Ray once that it was a good way to store it.

Keep meaning to come back and tell you that this has been working out well. I used a tiny little canning jar (quarter pint maybe?) and have dipped into it a few times now.

Thanks for the great tip!
