Ok. When I make steak I have been making it in a fryin pan. I am in Ohio, and it freezin out! But anyway, when I take it out of the pan to rest, the plate is filled with juices. Why are they not staying in the meat? I dont cut it or pierce it. Maybe Im not getting an even enough sear on them? or ? Is there another reason you could think of?
Also, as soon as i get overthis stupid cold, I am going to try making polenta. Its always had my interest and I am finally getting around to it. I bought a canister of it. Its not the quick cooking polenta. But I want to try the polenta cakes. Where you make it up, cool it, then cut it out and sear it. I have a recipe already, but I was wondering if anyone could give me tips, or an idea of what it tastes like? Im hoping later this week I will get into it. That and the curry chicken. Id hate to try something new when I cant really taste it!
