In the bakery I worked at it was a vanilla pudding that was simple to make..
Kroni will add what she uses.
I myself use the simple and easy way of doing things in my kitchen..
* as long as my family likes it Its all that matters here.

the good news is, there is very little difference in pudding (scratch recipe) and custard.

Pastry cream is pretty easy, this is Emeril's recipe for eclair filling:
