LOVE LOVE LOVE Corned Beef!!!! I hanve't had it for a while, but I need to fine some on sale! Both DD's like it, DH not so much so I make it when he's gone. I could eat a whole one myself in a couple of days. Good snacking, and no carbs!! LOL
I had never eaten corned beef, besids in canned hash, until I ate it at my mother in law's. She's not exactly a cook for the most part, but she taught me how to use a slow cooker/crock pot, and my mom never even owned one. She was a very old fashioned cook, and my mother in law relied on her crock pot and microwave. I never even cooked fudge or veggies in the microwave until she showed me it could be good that way.
Anyway....after eating it at my mother in law's a couple times, I decided to make it myself. Had no clue how, just stuck it in, put the spices on and cooked it all day.. ALLLL DAY on HIGH....no water. Oops. Good flavor, but couldn't understand why it was SO chewy...lol. She steered me right, and I've been making tender, juice corned beef ever since.
Now I'm really hungry for it!! Although I don't care for cabbage..DH likes it. The only veggie he actually likes.
Karen, I'd NEVER be able to work with my DH. If he is so much as in the kitchen when I'm cooking, I get annoyed, flustered and angry. LOL
I Used a little of the cabbage I had in the fridge from the last corned beef in the rice yesterday, since I can no longer find loose bean sprouts & I don't need a whole big bag of them. It added the crunch I was looking for without overpowering the flavor. Yep, I had fried rice for breakfast this morning! Yum!!
DH thinks it is weird that I'd rather have leftovers for breakfast than bacon & eggs or cereal. He will occasionally eat a slice of pizza, but that is as far away from "breakfast" as he'll venture!
