Mmmm, I love split pea soup for breakfast -- DH doesn't even like split pea soup (silly man!). Potato salad is one of my breakfast favorites-- it has all the makings from a traditional breakfast -- potatoes, eggs & bacon, sounds like breakfast to me! I love lasagna for breakfast & pizza, but never, ever cold pizza -- yuck!! My favorite breakfast would have to be crab legs with garlic butter, but I never have those leftover, anymore!!
I prefer traditional breakfast, but I did have leftover pizza this morning...lol. Not the best for a diabetic, but it's not very day.
But for about two years, I had soup almost every day. Split pea or bean and bacon. Not sure how I did that, it doesn't sound too good to me now. But still once in a while, soup's on in the AM. =)
When I made chicken long rice, I almost always have it for breakfast the next morning, it's better as a left over!!
I get the "you're weird" comment a lot too, but as a kid Mom made the traditional breakfast, and everyday the school called her within an hour or so, "she threw up again."
DH thinks it is weird that I'd rather have leftovers for breakfast than bacon & eggs or cereal. He will occasionally eat a slice of pizza, but that is as far away from "breakfast" as he'll venture!
I Used a little of the cabbage I had in the fridge from the last corned beef in the rice yesterday, since I can no longer find loose bean sprouts & I don't need a whole big bag of them. It added the crunch I was looking for without overpowering the flavor. Yep, I had fried rice for breakfast this morning! Yum!!
