Gelatin in Gravy

I was watching videos from America's Test Kitchen the other day and found two that used gelatin in sauces to mimick the effect of cooking meat on the bone.  Bones render gelatin, which makes meats and sauces taste OH SO GOOD, but I love the "cheat" of using unflavored gelatin.  Check out this recipe for pork Francaise!
