What makes a good hamburger? I tend to crave a good hamburger a lot. Some restaurants can do such a good job of making hamburgers. I have tried different seasonings in the hamburger and on top, have mixed in onions and cheese. They all taste fine, just not great. I love getting new hamburger recipes. We are having hamburgers tonight, so all of this is on my mind. I use ground sirloin. Is that my mistake? Should i use a mix of sirloin and chuck? Got any good flavor ideas for hamburgers?

This will sound crazy, but great hamburgers need a pretty high fat content.

Id like to see how to smack a burger, lol. I thought that they should have a higher fat content. I always get to the grocery too early for the meat counter to open. I think they open at 9 and I am always out of the store by 8 or shortly after. So maybe a ground chuck, or ground round? Sometimes I do the bread crumbs/egg thing. I have also tried pancake mix as a binder. Lasts nights were ok. They usually are ok, but you know that you can do better. Trial and error I guess. I do cook my burgers in a hot frying pan. Its as close as I can get to an indoor grill.
Maybe the restaurant hamburgers taste so great bc someone else is cooking them for me, lol!
