As I came home with stuffing from the grocery store last night, DH informed me that he wanted to make home made stuffing this year instead. {head -> wall}

I never thought about cooking the stuffing in muffin pans!! I just might do that with the extra this year!!

Sweated veggies are slowly cooked in oil or butter over medium heat, they don't brown, they sweat.

It is the best, I don't like other dresing or stuffing. Everyone always asked for my mom's recipe, it was a fav. I usually make a double batch and put it in loaf pans just to get more crusty edges...lol.

Wren, do you mix it all up the day before (I mean, the bread with the wet ingredients)? Or keep them separate? Making this a day ahead of time would be a great time-saver for me!

Jaielyn, DH was saying that his aunt used to make her stuffing with sausage too. He's going to call and see if he can get her recipe. He really loved it. Not sure if it used wine but that sounds good.

I make mine a day before and leave it in the bag in the refrigerator and when I ready to do it in the oven I do it up..
Homemade dressing is delicious compared to store stuff...

I myself do it simple
I like wheat and white - Bread that is dried and broken into pieces
I cut up onion and celery and some tops of the celery
stir fry it a little then add it to the bread
I sprinkle in some poultry seasoning and pepper
I add a egg or 2 depending on how much I am making
I then add chicken broth to this to make it up..

* I myself do add it to the turkey or chicken I am doing up
this year I am going to put it in a bag that goes into the turkey and pull
it out when its done..

* the secret I have is when the dressing or stuffing smells just right
with the seasonings I use its right to stuff..

Some put it in a pan and bake it alone..
I bake mine...
