Have you been making bread using the method in Artisan Bread in Five Minutes a Day? I know we were all talking about it at one point. They're pretty adamant that you need to use unbleached, all purpose flour, but if anyone likes to break the cooking rules, I know it's you! ;) I want to use wheat flour. Have you tried that? I don't mind mixing flours I guess, but I want to get away from using all white flour. Do you think I need to change anything else?

I made the dough, rolled out one small pizza, and left the rest to rise and ferment.

I will definitely try it this week. I planned to do it late last week, but ran out of time that day and ended up making pizza on whole wheat tortillas instead. Similar, I guess, but I'd like to try out the thicker pizza dough. Since we're making healthy versions (rather that Little Caesars or Dominos) I don't feel bad at all having pizza once a week!

Thanks, I'll take a look at that! I ended up using half wheat and half all purpose. It turned out well...enough wheat to feel healthy, but enough white not to make it too dense I guess. No one complained - that's all I can ask for some days!
