Lemon chicken - what's your way of doing it?

I have been in the mood for lemon chicken. But I'm looking for really, really lemony and not breaded. Not sure if I want a cream sauce or a plain sauce, but I'm up for suggestions.

My favorite is Chicken Piccata, however it's got capers, which we love,  but you might not.  Here is an excellent version.  PS the dredging in flour does NOT "bread" the chicken.  It just helps with the browing, and in the browned bits in the pan, thickens the sauce when you finish it.

I love lemon chicken.  In any lemon chicken recipe, use some lemon zest in the sauce to get that big lemon bang.  I love the piccata, too, and that same recipe also works with firm white fleshed fish.  

I sometimes use a Cajun injector.  Making a lemon and garlic infused butter to inject into the chicken is tasty.  If I'm cooking it outdoors, I rub the outside skin with lemon pepper.  Indoors, a glaze of orange marmalade or apricot jam is delicious.

Have you ever baked a  chicken in a  Dutch oven with a lemon ups it back side?

That makes for a lemony chicken, if done right, you have to score the lemon all the way to the meat in both end, I used  do a cross it is easier then making it look fancy  and for extra added lemon flavour I used to add two to the  pot and  would steam the chicken with lemon  flavour.  Now however I am allergic to lemons so no more lemons for me.

Just remember to rest the chicken on carrots or more lemon and a twig or two of thyme is always nice.,
