I wound up using Old Bay, paprika, garlic, chili powder, and not sure what all else.

I usually make a marinade with soy sauce, chopped garlic, a shot of Worcestershire sauce, lime juice and pepper, plus a little of whatever seasoning I am in the mood for. I have also added a little honey to this to make it a little sweet. It's pretty good on most anything. I use the same kind of sauce/mix and add some molasses when I fajitas. (I got this idea from Desperation Dinners cookbook but have adapted it a bit over the years.) That's a good idea to make them up ahead of time and use them for salads.
