Ok. Let me print out & process this. I'm sure I'll have more questions.
Last nite I did a mini-trial run. It wasn't TOOOOO bad, but the dressing was underdone. I used 350* but I think that was either too low or not long enough.

Wonder - Do you def. saute the onion & celery prior?

Is there a specific wonderful southern dressing recipe I should follow? I just winged it - I was brave!

Ok, so I'm printing this out & gonna study it!
Maybe you said but----- HOW LONG ideally would one roast the turkey wings in the oven prior?
and then HOW MUCH WATER do I add when boiling them down?
Have an idea of how much (beg. w/ 2/3 lb turk wings) then roasting, then boiling - how much stock it should all yield? :D

Ok now, I have been doing this is shown above ---- pulled it out of the fridge this morn & the entire thing is "gelatin"-ous. Does that sound RIGHT?!

Great! I've made 2 9x12s - yay me!
Ok. so i take 6 cups of that gelatinous stuff (can I freeze the rest?)
and then I mix THAT w/a roux?
