You need to know how many cups of flour your breadmachine can handle. Mine says 5 cups max. It should be in your manual some where. If a double batch is under your max, then go for it. If not then you will have to make 2 batches.
I have yet to refrigerate dough, because like you Im not sure if it will be ruined. So I hope someone else can answer that for you

YAY!! Thanks!! I am going to make the dough in two batches tomorrow morning, and keep them in the fridge. I guess I can take them out an hour or so before they need to be baked to rise? Or I can use it right out of the fridge for pizza dough?

Get it out in time to "warm up" a little so it won't be hard to roll out.

The crust turned out great, although it got too hard. I think I'll roll it out a lot thinner next time. We all made our own pizza's, DD Hannah made cheese and sausage, DD Madison made cheese, sausage, mushroom and olive. I made cheese, peperoni, suausage, olive and mushroom for the adults. It was REALLY good. Even DH said it was good, and "don't lose the recipe" ...lol. It's a keeper! My MIL really liked it too, and went off her diet to have two slices. =)
