I am in a tater rut. While I could eat twice baked taters every single day, its not healthy and the normal members of the family get tired of them. Mashed potatoes always sound good, but then once I make them, I eat a few bites and they taste blah. I roast them too, and the kids love that. Anyone have any other potato ideas?

Also, many months ago on vacation, we ate at an Irish restaurant. Im using that term loosely, bc we later found out it was a chain. Anyway, they made awesome irish potato cakes with some sort of balsamic reduction sauce. They were awesome. I am having a horrible time finding a recipe online. Anyone ever make those before?

Have you tried latkes (potato pancakes)? My MIL is Jewish, and a vegetarian, so she likes to make them a lot. There are a bunch of variations that I've seen here on Food~

Yay! i have all of those! I will give that mixture a shot this week.
I love cubed taters in the skillet like you described! And i do enjoy the skins. The rest of the family doesnt as much, but they usually deal if thats how I make them! Thanks for your help

Paprika, cumin, salt and pepper makes a great roast sweet tater!

Crap, forgot. Sweet potatoes are on the grocery list for tomorrow. I dont really care for the candied version. Too sweet for me. Do you have a go to spice blend for roasting the sweet potatoes?

Thank you. I do love taters and i know they are good for you. Thats why Im glad the kids like them roasted. The bad thing about my twiced baked taters are the stuff in them, lol! I have never tried scalloped. Well I mean, making them. Ive eaten them. I have always wanted to try a hashbrown patty!
