I do cook - and I have always used frozen spinach

So - don't laugh - I want to buy fresh spinach for omlettes - how do I cook them so I can use in omlette

This is only for eggs & cheese omlette - I know about washing - LOL - even in frozen you can get tiny rocks.

It seems to me that often when I've had spinach it is just barely wilted in an omelet. I would wash it, steam it gently, & them drain it for my omelet. I, too, am a spinach lover...not so much the rest of my family. I have started buying the bag of frozen spinach & throwing a handful or two into things..much easier to work with than the solid block! Hmmm, I woke up kind of hungry today, I'm thinking a spinach, mushroom & cheese omelet might just hit the spot!

I guess I'll stick with frozen - what we did the other night is take a handful - strain, wash, defrost, towel dried and threw that baby in the omlette...............is that right?

I eat this a lot!! What I do is saute the spinach in the fry pan first. I just spray it with olive oil and let it cook over medium until it wilts down. Like PP said, it cooks down a lot, so don't be shy when adding it in. Sometimes I add chopped mushrooms too.

Once it's how I want it to be, then I just add the egg. I used to scramble them up, but now I'm lazy and I just crack them right into the pan and give them a stir with my spatula. Add your spices. I add feta cheese too. It's so good that way.

I guess I could take that handful of frozen - wash and drain and cook it slightly frozen in omlette - right - cuz its already shreaded.

What do ya think
