Question: fruit for a BBQ/picnic

We're having a 4th of July picnic at a local park. I'd like to put together red, white-ish, and blue fruit on skewers ahead of time. I'm thinking watermelon cut into star shape with a cookie cutter, blueberries, strawberries, raspberries and black berries. I might add banana for the white, or just go with red and blue.
My question is - will the things that are cut, like the watermelon and banana last for a few hours, cut up like that? Bananas turn brown, right? I usually splash a little lemon juice/water mixture on my apples when they're cut up. Could I do that with banana too? Or do you think I should just skip the banana part?
