I bought a pound of swiss cheese for something, and I don't use it much.

You could do both.. It won't be the same tho after freezing cheese it kinda
has to be used differently.. Kroni will be around to add to this also..

I keep thinking I'm going to make chicken courdon bleu, but not soon enough before it goes bad. I could use the swiss shredded or sliced that that.

Any cheese will freeze, but will be slightly grainier after thawing.

I freeze shredded cheeses that I buy shredded; Kroger always has shredded cheese on sale.

I've notice it seems to last longer whole myself, as well. And you can always cut off any moldy bits and still eat the rest :) At least with hard cheeses you can.

Great!! I'm glad I didn't shred it yet then. I'm going to get it frozen, then when I DO get around to making cordon bleu I'll be ready!

Not that with the "mice" I've got in my house (DH and DS) does any cheese last long enough to get moldy, lol.

that's the usual around here too!! Lol But, real swiss is hard to just munch on plain. Chedar on the other hand, or colby, jack...those get eaten right away.
