Sweet Potato Pie

2 cups hot mashed sweet potatoes (you can boil them in the skin)
4 tbsp butter
1/4 cup brown sugar
2 eggs
1 tsp cinnamon
1/2 tsp nutmeg
pinch of ground cloves
1/2 tsp salt
3/4 cup heavy cream

Mix well and pour into an unbaked pie crust.

4 medium sweet potatoes

1/2 stick butter, softened

1/4 cup sugar

3/4 cup brown sugar

2 eggs, beaten

1 teaspoon pure

A sweet potato pie recipe, made with butter and sweet potatoes, along with vanilla and cinnamon.
Ingredients:
  • 4 ounces butter, softened
  • 2 cups cooked and mashed sweet potatoes
  • 2 cups granulated sugar
  • 1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
  • 1 teaspoon vanilla
  • 3 eggs, beaten
  • 1 1/2 teaspoons cinnamon
  • 2 prepared pie shells, unbaked
Preparation:
Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour, until set.
Makes 2 pies.

Sweet Potato Pie

1 1/2 lbs. sweet potatoes

4 T. melted butter

1/2 C. brown sugar

1/2 C. sugar

1/3 C. honey

2 well beaten eggs

1/2 t. ginger

1/4 t. nutmeg

1/2 t. ground cloves

1/2 t. cinnamon

1 C. cream or evaporated milk

1 unbaked 9 inch pie crust

Wash the sweet potatoes and put tem in a pan covered with water. Bring to a boil and reduce heat to medium. Cook until potatoes are soft, about 45 minutes. Drain, cool and peel potatoes.

Mash the sweet potatoes with the sugars, honey and butter. Mix very well. Add in the eggs and spices. Blend well. Stir in milk or cream and blend well.

Pour into the crust and bake for 10 minutes at 400° F. Reduce temperature to 350° F. and bake for about 30 minutes or until the center is firm.

Optional: Sprinkle 1 C. pecans on top of the filling before baking. Some may sink in but that's okay.

Lotsa exercise and lotsa being hungry! I have become a weight lifter also...got a little caught up in it because now Im seeing a Doctor and taking Sustabalon injections and something else called Dianabol.....Holy Fecal matter! recovery time is about 24 hours and strength gains are almost frightening...along with the size increase! Im gonna be looking mighty good in a bathing suit here very soon.I will put up another pic after I finish my first cycle.
