Sweet Potato Souffle

I don't like "candied yam" dishes with marshmallow and a ton of sugar.  This recipe has been in my family for generations and I'm re-posting because it has become a family favorite with many past and current members in the 16 years that I have been sharing it here.  I even have 2 special Pyrex casserole dishes with silver serving racks devoted to the sweet potato souffle and the dressing, passed down to me from my grandmother.  So from my house to yours:

Sweet Potato Souffle

2 1/2 cups cooked sweet potato 
1/2 stick butter
1/2 cup sugar
1/4 cup brown sugar (I use dark, light is fine too)
1/2 cup milk
1 tbsp orange juice (optional)
2 well beaten eggs
1/4 tsp salt
1 tsp allspice
1 tsp cinnamon
2 tsp vanilla
1/3 cup chopped pecans (I go crazy with the pecans)

Cook the potatoes (boil, nuke, or bake) and peel when they are cool enough to handle.  Mash the potatoes and add butter, sugar, salt and spices.  Mix well and add eggs, then milk and vanilla.  Fold in nuts.  Bake at 350, about 35 minutes.  You'll know when it's done.  OK, if you want to put marshmallows on it you can, before baking.
