When to defrost the turkey?

I always hear you're supposed to take the turkey out 4 days in advance to let it defrost. Mine never seems to get fully defrosted though and I end up giving it a water bath to finish it off. Should I take it out 5 days in advance instead? I'm afraid I'll ruin it somehow and end up without a turkey.

If you have a big bird, it may take 5 days in the fridge & that will not ruin it -- remember, it will still be frozen basically for a day or two as it begins to thaw. You may still end up with some ice crystals, just running wateron & through it, as you prepare it should take care of the last bit of iciness.

Your turkey in that very tight, airless vacuum sealed package?

My mom always said turkey was one of the easiest things to cook, especially when cooking for a lot of people. I thought she was nuts until I started cooking my own.
