Karen, Saw this story and wonderful recipes using alternative flours and thought of you...

The lemon cornmeal cake is especially intriguing. Can you ground almonds into a suitable flour without a mill? If so, I think I might give this a shot.

I got my first coffee grinder when one of my customers got tired of her Gevalia subscripton, and started giving me her entire monthly package.

Darn! Well scratch that then! I still might pick up the coffee grinder if I see a cheap one. It seems like I could get pretty good use out of it. (Not to mention I could actually use it for coffee since I just buy instant right now.)

:smileysad: Unfortunately, quinoa is a grain and will burn up your blender/food processor/spice grinder.

I might just have to pick one up! I have a quinoa cookbook that has several recipes using quinoa flour. I bet I could use it to make that as well.
