Carrot Cupcakes

Carrot Cupcakes

2 large eggs
1/4 C. milk
1 and 1/3 C. all-purpose flour
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt if desired
8 TBLS unsalted butter, at room temperature
1 C. firmly packed light brown sugar
2 C. grated carrots
1/2 C. chopped walnuts, optional
6 oz. cream cheese, at room temperature
2 TBLS honey

Preheat oven to 350 degrees F.  Line a 12-cup muffin tin with paper liners.  

Whisk eggs and milk in a measuring cup.  In a medium bowl, whisk flour, baking powder, cinnamon and salt.

In a large bowl, using an electric mixer on medium-high speed, beat butter and brown sugar until fluffy, about 3 minutes.  
Scrape down sides of bowl.  Reduce mixer speed to medium-low, beat in half of egg mixture, then half of flour mixture, beating well after each addition and scraping sides of bowl when necessary.
Add remaining egg mixture and remaining flour mixture.  Beat on medium speed for 1 minute.  Fold in carrots and walnuts, if using.

Divide batter among muffin cups (batter will almost fill cups).
Bake until cupcakes are golden and a toothpick inserted into center of 1 comes out clean, about
22 to 25 minutes.  Let cupcakes cool in pan on wire rack for 5 minutes, then transfer cupcakes to wire rack to cool completely.

Using a rubber spatula, stir cream cheese until smooth in a medium bowl.  Stir in honey.  Pread or pipe over tops of cupcakes and serve.

Thursday I made lemon poppy-seed muffins with the little 3 year old I watch.  It was the fist time I've had her really help me by letting her dump the ingredients into the bowl, and giving her a spoon to help mix.   She really enjoyed it. After I had them in the oven I gave her the bowl to play with, the problem was I turned my back for a moment and she started dumping in the the ingredients I hadn't put away. Friday the first thing she said to me as soon as she walked in was, "Pat-Pat can me do muffins again."  Sweetest thing I heard all day.

How adorable.  Keep it up and she could be a famous cook or chef or baker someday.
Speaking of muffins, I do need to make some more of them.  I love making muffins and always nice to have them in the freezer for a quick snack or something.Smileycons!
