Make ahead breakfast?

Hi! Next week I'm going to be leaving earlier than normal for work due to some early morning meetings. I wanted to try to bring breakfast with me in the car for the commute, but want to avoid the prep in the wee hours. Can you really make eggs and freeze them and then reheat them? Oh that's interesting. I've never seen that before. I would think that if you're only microwaving the eggs a few seconds, just to heat them back up a bit, it would be fine. I don't think I'd freeze them though.

I know I worked for a deli and they did have the eggs frozen so maybe it would be ok.. I for one always made mine ahead of time and had them in the refrigerator to put in a bag to go... But it all depends on how you cook them I know at work they were like scramblers..

It says they keep in the fridge for a week, so I would not see any point in freezing them.  But it is a cool idea.  I like to slice ham and cheese to keep on hand for an English muffin on the run, since I can't have the eggs.  Tomato is good on there too!
