Mexican Pasta Bake 3 cups rotini pasta, uncooked 2 16-oz jars mild thick & chunky salsa 1 C cottage cheese 1 16-oz can black beans, drained & rinsed 16 oz can corn, drained 2 C shredded sharp Cheddar cheese, divided 1/4 C fresh cilantro, chopped Cook pasta as directed on package; drain. In large bowl, mix cooked pasta, salsa, cottage cheese, beans, corn and one cup shredded cheese. Spoon into a deep 13 x 9 x 2-inch baking pan sprayed with non stick vegetable spray. Sprinkle remaining cheese on top. Bake uncovered, at 375 degrees F for 25 to 30 minutes, until hot and bubbly. Sprinkle with chopped cilantro. Makes 10 to 12 servings

Hello, hello.....

How are you doing now with your ipad?  Are you having fun with it yet?   I love my ipad, my iphone and my ipod.  LOL.  sounds funny doesn't it??
my guy in Africa is suppose to be contacting me soon.  wonder if he is having internet troubles over there?  I know he is having problems with his phone.  Oh well.  I will be there soon enough.  then I will be posting from Tamale again.
It is another sunny day today.  too darn bright for me to go outside.  with the white snow and the sun as low as it is, a person can not see when they go outside.  Needless to say, all that gives me a horrid headache.  I will not drive when the sun shines at this time of year.
Anyways..... I forgot what I was gonna say after all.  I'm reading a really neat book called "The Girl Who Married an Eagle" by  Tamar Myers.  It is about a little girl in Africa.  I can hardly put the book down it is so good.  Well she did not literally marry an eagle. LOL.
     Oh geesh, I have so many dirty dishes to do and a house to clean up and I don't want to do it.  Calgon.......Take me away!!!!!!!!!
