Okay, Karen, I have got my pork roast thawed & I am ready to grind it up! I would like to do some sort of sausage mxture with part of it, what advice & suggestions do you have for me?

Not too late, I got called in to work today & I promised Levi we'd get some Christmas goodies made. My nephew's gf had their baby today, so I had to go to the hospital to see & hold her, so no sausage making for me today. Hopefully I'll get to it tomorrow... What sort of seasonings would you suggest? Garlic is one of my favorite ingredients. I know you mentioned fennel before, would that be fresh or seeds, or what?

Use fennel seed, and garlic powder.

Thank you, both!! Wow, that is a lot of recipes!! (funny how when you see a word over & over it starts to look weird -- sausage just doesn't look right, but I know it is!!). Now I can't decide what to make, it all sounds good!,
