Cinnamon Chia Seed Pudding

Makes 1 serving

Prep time: 2 minutes

Cook time:  you just wait about 30 minutes for the chia to soak (see below)

3 tablespoons of chia seeds

1/4 cup nonfat milk or unsweetend vanilla almond, hemp, or soy milk (whatever you prefer)

Stevia (optional)

Measure out 3 tablespoons of chia seeds into a bowl

Add 1/4 cup of milk to the bowl

Mix approximately 1 teaspoon of cinnamon into your milk and chia seed mixture (or enough to taste)

Add a dash of stevia to your chia milk and cinnamon mixture and stir (optional)

Let sit for approximately 30 minutes in the fridge or until the mixture thickens or let sit overnight for the next morning

NOTE: I let mine sit for 45 minutes in the fridge and then heated it up for 30 seconds in the microwave because I wanted something warm. However, it tastes great cold too! I tried both.
