I don't think I have ever had it.   I like chicken parmesan.   And I like eggplant.   Don't know why I wouldn't like it.

2. Have you ever tried to make a baked Low Fat version? :)
   Nope

3. What do you think about processed food products?  Undecided
Sometimes they are inevitable.   I work full time (plus overtime) have two very sports active kids.   Sometimes you do what you can do to get them fed.   It's sure not my first choice though.

4. Do you add oysters to to your dressing/stuffing ? Surprised
   I hate dressing.   So, no.

5. What are your favorite holiday sides?  :)
   Mashed potatoes and corn pudding

1. Do you like Eggplant Parmesan? Yes. 2. Have you ever tried to make a baked Low Fat version? I have only made a low-fat version. 3. What do you think about processed food products? I buy very few, mostly treats for the kids (chips if we are going to the cabin). I bought DS Chinese Egg Noodles for a snack for after school and DD strawberry-banana bread to make toast with for after school snack. Mostly they will eat greek yogurt and fruit though. 4. Do you add oysters to to your dressing/stuffing ? No, I don't care for oysters (or stuffing very much for that matter). 5. What are your favorite holiday sides? I like a nice fresh green to go with all that mushy food. I usually will make a nice salad or fresh green beans as a side.

No, I don't eat sardines, but DH loves them. I bought my kids super spicy Korean noodle bowls last week. These were just the fat kind you dip into duck sauce that you get at a Chinese restaurant.

Yes, I always make the corn pudding.   I had a recipe I used for years but about 3 years ago I decided it was too dry and shook it up and made this one.

Corn Pudding

5 eggs
1/3 cup butter, melted
¼ cup white sugar
½ cup milk
4 T. cornstarch
1 (15.25 oz.) can whole kernel corn
2 (14.75 oz.) cans cream-style corn

Preheat oven to 400 Degrees F (200 degrees C). Grease a 2 quart casserole dish.

In a large bowl, lightly beat eggs. Add melted butter, sugar, and milk. Whisk in cornstarch. Stir in corn and creamed corn. Blend well. Pour mixture into prepared casserole dish.

Bake for 1 hour.

There is usually nothing left.   I have subbed frozen corn for the can of whole kernel corn.
