What are your favorite picnic or BBQ foods?

We Don't picnic much. I don't like cold fried chicken which was one of my mom's favorites. I like hot food hot & cold foods cold. Probably go with a nice juicy watermelon or homemade potato salad for a picnic. BBQ, just about anything that can be thrown on the grill -- steak, chicken, hot dogs, burgers, ribs, fish...
We have our annual church picnic/BBQ/potluck in the mountains Sunday afternoon. I have no clue what I'm bringing!! I promised the boys Snickers salad, but would like to take some real food, too. The last few years I did BBQ pork, which was a big hit, but I'd like to do something different. Any suggestions?

How do these sound....


Cocoa Coffee Rubbed Steak
Steak rubbed in a cocoa expresso mixture and grilled to desired taste.

1 tbsp cocoa
•1 tbsp instant espresso powder
•2 tbsp brown sugar
•1 tbsp ancho chile powder
•1/2 tsp salt or to taste
•4 6-8 oz New York strip steaks

In a small bowl, combine cocoa, espresso powder, brown sugar, chile powder and salt.
Prepare outdoor grill for steaks. Coat both sides of steaks with cocoa and coffee mixture.
Grill steaks, turning once, for about 5 minutes per side for medium, or until desired doneness.
Let steaks rest about 8 minutes before serving.

Makes 4 servings

Or these..

SUNNY CITRUS SPREAD

15 ounce tub “I Can’t Believe It’s Not Butter” original
2 oranges
2 teaspoons honey
1/4 teaspoon coarse sea salt
1-2 Tablespoons finely chopped walnuts (optional)

Garnish: Additional chopped walnuts
Orange curl or slice

Place butter in mixing bowl. Grate the rind of both oranges and place in bowl. Slice oranges in half and remove segments. Chop segments and drain. Stir into butter. Stir in sea salt, and walnuts, if using. Stir to blend and place in serving bowl or butter crock. Garnish with additional chopped walnuts and orange slice or curl. Serve citrus butter with toasted English muffins or desired bread.


If you prefer more savory flavors, this recipe is for you!
FARMER’S MARKET SPREAD

15 ounce tub “I Can’t Believe It’s Not Butter” original
1/2 cup seeded unpeeled cucumber, shredded and squeezed dry
1/2 cup shredded red radishes, squeezed dry
2 Tablespoons minced flat leaf parsley
2 Tablespoons minced fresh chives
1/4 teaspoon coarse sea salt
1/4 teaspoon freshly ground black pepper

Garnish: Minced fresh chives
Thinly sliced radishes

Place butter in mixing bowl and stir in remaining ingredients. Spoon into butter crock or small serving bowl and garnish with chives and radishes. Serve on baguette slices or desired bread.

Note: Measure the cucumber and radishes after they have been well-squeezed of moisture.

Layers of red, white, and blue gives this recipe patriotic flair. It is extra fun to serve on star-shaped toast! Simply use a cookie cutter to create the shape. It is the perfect way to start Independence Day!

STAR-SPANGLED SPREAD

15 ounce tub “I Can’t Believe It’s Not Butter” original
3 Tablespoons Strawberry Preserves
1/2 teaspoon lemon zest
3 Tablespoons Blueberry Preserves

Garnish: Sliced Starfruit

Divide butter equally into three separate bowls. In the first bowl, stir in the strawberry preserves. In the second bowl, stir in the lemon zest. In the third bowl, stir in the blueberry preserves. Layer the three butters in your serving bowl or butter crock, starting with the strawberry on the bottom, the lemon in the middle and the blueberry on the top. Garnish with a slice of starfruit. Serve Star-Spangled Spread with your favorite toast
