Apple and cinnamon cake

Apple Cinnamon Cake
6 – 7 Granny Smith apples
3 tsp cinnamon
4 Tbsp sugar
2 3/4 cups flour, sifted
3 tsp baking powder
1 tsp salt
3/4 cup vegetable oil
1 1/2 cup sugar
1/4 cup apple juice
2 1/2 tsp vanilla
4 eggs
1/2 cup pecans, chopped
1. Preheat oven to 180C/350F.Grease a tube pan.
2. Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside.
3. Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, apple juice, sugar, vanilla and eggs. Mix wet ingredients into the dry ones until well mixed.
4. Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top then sprinkle with pecans. Bake for about 1 1/2 hours, or until a tester comes out clean.

So nice my iPad now works with iVillage! I ended up up to my neck in apples and batter with this one. I didn't have the right size cake pan so ended up making the recipe into muffins. I have decided I am definitely NOT a cinnamon fan but dh LOVED this recipe and I will make it again as a muffin recipe and only make half the quantity.

Buy a pan so you have more to eat. Halve the cinnamon. I sub some of it with cinnamon sugar which is not as strong when I feel like it. Muffins sound good.
