Barbecued Pork Chops with Rosemary/Lemon Marinade

(From Taste of Home magazine)

2 cloves garlic, minced

½ cup lemon juice

Grated rind of 1 lemon

2 tablespoons olive oil

1 tablespoon chopped fresh rosemary or 1 teaspoon dried

1/8 teaspoon dried basil

1/8 teaspoon lemon pepper seasoning

4 pork chops, cut 1 inch thick

Whisk together garlic, lemon juice, rind, oil, rosemary, basil and
pepper. Place pork chops in a large plastic bag; pour in marinade, seal and
refrigerate at least 2 hours or overnight, turning occasionally. Drain
and reserve marinade; brush on the chops while cooking. Grill chops
over medium coals about 6 minutes per side or until juices run clear.

Yield: 4 servings

I am loving my fresh herbs--even DH comes into the house and loves the aroma of them cooking-they really do make an aromatic difference-rosemary, thyme, oregano and basil for this recipe! And fresh

Do put fresh mint in the tea, have not tried almond extract, will have to see if I have some.
