Basic muffin mix

This is a muffin mix that I've used for all types of muffins...I've used it for blueberry muffins, choc. chip muffins and banana nut muffins and plan on trying apple pie muffins next. 

Muffin Mix

1/2 cup butter or margarine, room temp

1/2 cup sugar

1/2 cup brown sugar

2 eggs

1teas. vanilla

2 teas. baking powder

1/4 teas. salt

2 cups flour

1/2 cup milk

In a bowl mix butter until creamy, add sugars and beat. Add eggs, vanilla, baking powder and salt, mix. Fold in half the flour and milk, fold in the rest of flour and milk then fold in whatever fruit you'll be adding. 

Heat oven to 375, put batter in greased muffin tin and bake about 15-20 minutes or until toothpick comes out clean.

You're welcome! So far the base is working for the muffins I've made, will let you know how it is for the apple pie muffins.

Yes love it and make muffins often for ds to have before school. So easy and quick...
