Best no-spoil foods?

Hi. I'm going to a BBQ at a raceway. I'd like to bring a meal food, not just a side, as well. Trying to think of what I can bring that a) won't spoil and b) won't need to be kept hot (unless you have a good way of keeping it hot). I thought about the pasta primavera someone mentioned in another thread, but also hope to bring some kind of meat dish. So far someone is bringing a hero, pulled pork, and rice and beans.

One meat I can think of that loves being served cold (out of the cooler) is ham.  I know that is a staple in the hurricane zones, where power can be out for days or weeks, and you need foods that won't spoil and will be easy to keep in a cooler.  Perhaps add some ham to the pasta primavera, to make it heartier?

I can't think of ANY food, besides crackers, bread, fruit, and peanut butter and jelly, that would be safe to leave sitting out in the heat.  Many foods can safely be KEPT cold, and served cold, including any kind of cold cut sausage, sliced meat, baked or grilled salmon, cold fried chicken, salmon salad, crab salad, ham salad...  Just put the food in good zip bags or Rubbermaid, and bury them in ice in a cooler.  Serve, and return container to ice.  Replace ice as needed.

I love the ham idea! 

I've had this recipe on my "want to make" list and you know what - ham in it would probably be awesome! You could even do peas if you'd prefer (my husband loves peas with his ham).

This is a very interesting question. I too like the ham idea. Of course I am partial to ham lol. I honestly can't think of any other dish because I'm not sure I'd trust chicken if there is no way to keep it cool and I don't think sloppy joe would be good unless it is hot.
