Blueberry Cobbler

1 pint fresh blueberries, washed and stems removed
1/2 cup firmly packed light brown sugar, divided
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 large egg, well beaten
3/4 cup milk
2 tablespoons butter, melted

Preheat oven to 400*F (205*C). Lightly grease a 9-inch square baking pan;set aside. Toss prepared blueberries with half of the brown sugar and place in the prepared baking pan. In a mixing bowl, combine the flour, baking powder, and the salt. Set aside. In a small bowl, combine the remaining sugar with the beaten egg, milk and melted butter, mixing well. Add the egg mixture to the flour mixture. Stir the mixture until it is smooth and then pour over the berries. Bake about 30 to 35 minutes or until golden. Best served warm.

Sounds yum. I was going to the farmers markets this morning and I like to go early, but would be crunching through ice and with a three year old with a cold that is not a good idea, so sadly will be missing out.

unfortunately have to wait another two weeks to go there. The particular chilli relish I want is not there that day so for it I have to wait till next month. I could scream and myself for not getting it last time.

Chili relish, sounds good! I haven't made it to the farmers market yet this year. So far I've had all the fresh fruits and veggies I need. Might stop in Saturday and see what they have.

Smileycons!  I have lots of blueberries in the freezer.  I made a rhubarb pie the other day and it is all gone, now I think maybe something made with blueberries would be good next.  What do you all think then?  This one or a pie or something?

I think the cobbler or the crisp would be good, Think I might make the crisp this weekend if it isn't to hot out.
