3 Tblsp butter
2 cups sliced mushrooms
1 teasp dried dill
2 Tblsp white flour
1 1/4 cups milk
1 cup sharp cheddar cheese, grated
dash of black pepper
4 English muffins split in half
Melt 2 Tblsp butter in a 2 quart saucepan. Add mushrooms and dill and saute till just tender. Add flour and brown. Slowly stir in milk and lower heat, stir in cheese and stir with a hand whisk, adding salt and pepper. Turn to the lowest heat and stir occasionally while preparing eggs.
Heat large frypan and fry eggs in remaining butter (in batches if necessary). Toast the muffin halves.
Put an egg on each toasted muffin half and top with the hot cheese sauce and serve, two per person. Serves 4.
