Egg McMoon
3 Tblsp butter
2 cups sliced mushrooms
1 teasp dried dill
2 Tblsp white flour
1 1/4 cups milk
1 cup sharp cheddar cheese, grated
pinch salt
dash of black pepper
8 eggs
4 English muffins split in half

Melt 2 Tblsp butter in a 2 quart saucepan. Add mushrooms and dill and saute till just tender. Add flour and brown. Slowly stir in milk and lower heat, stir in cheese and stir with a hand whisk, adding salt and pepper. Turn to the lowest heat and stir occasionally while preparing eggs.

Heat large frypan and fry eggs in remaining butter (in batches if necessary). Toast the muffin halves.

Put an egg on each toasted muffin half and top with the hot cheese sauce and serve, two per person. Serves 4.

This is really delicious! A special brunch treat on the weekends. It originally came from a great book that is now out

Yum! I know dh and I will love this, wonder if I can get ds to eat it! He's not a big fan of eggs but love cheese sauce, might just be the thing to get him to eat an egg lol.

It makes a lot of sauce and if you buy the smallest eggs you would probably get away with it. It is also very filling, maybe for his put an egg on one half and not on the other, just the sauce. Good luck.
