Ever seen meatloaf cupcakes?

Or more precisely turkey loaf cupcakes with mashed potato frosting? I am having a hard time getting my head around this one. Picking up something made in a foil liner in a muffin pan and biting into it to find ground turkey,grated veggies, breadcrumbs, an egg and seasonings all combined then mashed potato piped on top and baked, does not sound quite right to me. I guess it is the ultimate in portion control, but I won't be making it here anytime soon....how about you?

I don't know-I could prob wrap my head around a mini meatloaf cupcake frosted with stuffed mashed potatoes (bacon, cheese, green onion and sour cream)...

I have not done the mashed potato frosting 'cuz usually when I do the mini meatloaves I am doing it to get dinner on the table faster, not to be fancy. The kids love meatloaf muffins & yes, great for portion control!

I have been wanting meatloaf, but with temps well over 100 right now having the oven on for an hour or more is crazy!! Meatloaf cupcakes are a good compromise! We went out for dinner tonight& I was tempted to order the meatloaf, but couldn't resist the lamb shank...I think I will do some frosted meatloaf cupcakes next week, though. Meatloaf is always a hit at my house!!

I have not cooked a meatloaf lately...sort of a winter hearty meal in my mind. I saw a curried meatball recipe of Aarti's Parti on FoodNetwork...might try that one before long!

Not a good time for oven cooking for you right now, something for when it cools down. I have to say I would have gone with you on the lamb shanks. Yum. We have had them a lot lately. I do them in the slow cooker then keep some of the leftover liquid and put in the fridge overnight, then skim off the fat and use as the stock for a soup or casserole. Great flavour.
