Holiday Baking

Have you started doing any baking for the holidays?  What's your favorite thing to bake?

I will probably be making cookies again in the next week or so.  I have all the ingredients, just don't have a lot of freezer space.

I sold my Kitchenaide mixer yesterday.  Cry  The only thing I used it for was cookies and only a few times a year so I'll just go back to making them by hand or at least partially by hand.  I do have my small food processor I can use for the first part of the process.  The mixer gathered dust too much of the time and with my limited kitchen space it had to sit out in the open.  Also, I'm going to either use the money to pay off some bills or toward new tires for my vehicle.  We also have our chest freezer for sale plus a couple of other things.

Yes it is, plan to use extra money for something and then something else comes up! Nice that you ds is building you the cover for you to drive your RV under. True sometimes it's quicker/cheaper to just buy something already made when on a specail diet.

It is difficult. My neighbors put out a wooden cart a couple of weeks ago with a FREE sign on it and I grabbed it for the mixer. I sold the mixer yesterday but will keep the cart, at least for now. I have someone who's supposed to buy the freezer tomorrow so that'll be out of here too. We just don't have the money to keep it full so no point in keeping it. Turns out the money from the mixer is going to something we hadn't planned on. Isn't that always the way??!!!! DS1 is going to build a metal framework to mount a tarp so I can pull the RV in & out even in wet weather. I'd love to do more baking this year but it's even more difficult when I'm not supposed to eat wheat or dairy. I keep thinking I'll find some easy gluten-free recipes but then it means I have to go buy more supplies. Easier to just go to the health food store and buy something.

Haven't started yet but did test a couple of recipes to see if I wanted to use them. I have a really easy/quick fudge recipe that I made last week that's a hit. That will be the first recipe added to my holiday baking list. It's hard when you don't have much kitchen space and if it's not used often kind of a waste of space that you could use for something else.
